Today, however, I just had to get on and share the wonderfully delicious, yet quick and easy, recipe I made for dinner. It’s not what I had planned to make for us today but nothing is very organized for me right now. Besides, it was a recipe I found in my new book ordered from Amazon: One Bite Won’t Kill You and I couldn’t resist trying it out. So here it is:
Honey-Baked Curried Chicken
(Double the recipe to make extra gravy)
4 tbsp (1/2 stick) unsalted butter (I used regular)
¼ cup honey
1 tbsp Dijon mustard (I mixed mine up with a little honey mustard also)
1 tsp curry powder
1 tsp salt
3 whole chicken breast, halved (I used 2 plus 2 thighs)
Preheat the oven to 350F.
- Melt the butter then mix in honey, mustard, curry powder and salt.
- Place chicken pieces in a 9x13 inch baking pan and pour the mixture over top.
- Bake uncovered for 1 hour or until chicken is cooked through and nicely browned.

I LOVE curry but don't like honey, wonder if I'd like this.
