Honey-Baked Curried Chicken

With just over a month to go until my C-Section (argh!), and growing huger everyday, I’m really beginning to slow down when it comes to getting things done. Everything, including blogging, as you may have noticed! But I have also been suffering killer backaches which love to strike when I’m at the computer (or cooking, watching TV, lying down …) so I’ve had to avoid using it as much.

Today, however, I just had to get on and share the wonderfully delicious, yet quick and easy, recipe I made for dinner. It’s not what I had planned to make for us today but nothing is very organized for me right now. Besides, it was a recipe I found in my new book ordered from Amazon: One Bite Won’t Kill You and I couldn’t resist trying it out.  So here it is:

Honey-Baked Curried Chicken
(Double the recipe to make extra gravy)

4 tbsp (1/2 stick) unsalted butter (I used regular)
¼ cup honey
1 tbsp Dijon mustard (I mixed mine up with a little honey mustard also)
1 tsp curry powder
1 tsp salt
3 whole chicken breast, halved (I used 2 plus 2 thighs)

Preheat the oven to 350F.
  • Melt the butter then mix in honey, mustard, curry powder and salt.
  • Place chicken pieces in a 9x13 inch baking pan and pour the mixture over top.
  • Bake uncovered for 1 hour or until chicken is cooked through and nicely browned.
Serve with rice or noodles.

I LOVE curry but don't like honey, wonder if I'd like this.
