Victoria Sandwich

I stayed home today to try to get some things done around the house, laundry, floors, bathroom ... but it was next to impossible with Willow. She must not have got enough sleep last night because she just had to have Mommy's attention today nonstop. She really needs a playmate!

I did manage to get a few things done including making a big batch of broccoli soup to freeze and i couldn't resist, i had to try out my cake-making skills before my Wilton class - which is tomorrow btw! I decided to make a Victoria Sandwich because I have new scales for English recipes and wanted to give them a go. I also used to love this cake. The scales worked great but I'm not sure about the recipe I chose. After nibbling on the scraps, i thought the texture was OK but the taste was more eggy then i would have liked. I've had this happen on another recipe i tried with similar ingredients. I wonder if egg sizes are different in UK recipes. I think the most i can ask for is edible at this point though!


Jam oozing out the sides doesn't make for a very attractive cake. I topped the jam with Dream Topping.
