Apples

Apple Tart

I am loving apples right now. Not sure what it is, we’re coming out of Fall and into Winter and Christmas now but I guess I didn’t have my fill of them or something?

Stephen’s Mom gave me some apples that she wanted to get rid of and they ended up sitting in my fruit bowl for a while too as I tried to decide what to do with them. Finally, the other day, I put together a sort of apple tart. A shortbread-like crust with an appley (should be a word!) cinnamon topping.

I tried a piece warm out of the oven and thought they were very nice, though I could have done with even more apples!


I took the rest to Marie’s that evening where we were having dinner and got lots of good reviews.

CRUST:2 1/2 c. flour (for the half cup, I used ground almonds so I could get the bag out of my cupboard)
1/2 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 c. butter (2 sticks), softened
1 egg, beaten with ½ tsp vanilla

APPLE FILLING:
1/2 c. white sugar
1/4 c. flour
1 tsp. cinnamon
3 sliced, peeled apples (next time I would increase this to 4 or 5)

Preheat oven to 350F.

To make the crust: mix together the flour, sugar, salt and baking powder in a medium bowl. Rub in the butter with your fingers. Gently mix in beaten egg and vanilla. Should be a soft doughy type of texture. Spread into a greased 9x13 pan.

Combine the prepared apples with the other filling ingredients and spread over the crust. Optionally, top with a few pats of butter.

Bake for about 40 minutes in the oven or until skewer inserted in the middle comes out clean and crust is beginning to brown.

Allow to cool and then slice into squares. I drizzled a little powdered sugar/milk glaze over mine also which made it look pretty I think.

I love this tradition, my only regret is that I didn't start it when the kids were younger (and you could probably make it much cuter with a little boarder or something). Just make sure you find a cloth that doesn't bleed when you write on it (if you decide to start one). I will be following you! Have a great CHRISTmas!

thanks tori, i really like that tradition. I'm sure it would be very interesting to see how the things change that they write each year. Maybe from gameboy to truck for example heh. Love it, thank you.
