Felt like making a little snacky this morning. Granola bars (or flapjacks as I know them) seemed like a quick and easy choice.
Ingredients:
2 cups rolled oats (not the instant kind)
2 tablespoons brown sugar
2 tablespoons golden syrup (can substitute honey or light corn syrup also)
1/2 cup butter (1 stick)
Pinch of salt
Once again, I forgot an ingredient in the pic: salt.
Put the butter, syrup and sugar into a medium sized saucepan.
Melt together over a medium-low heat, stirring with a wooden spoon. Don't let the mixture boil.
Meanwhile, grease a square cake pan - preferably a shallow one. Mine wasn't shallow and it was nonstick but I decided to grease anyway.
Remove the saucepan from the heat and stir in the oats ...
...and the pinch of salt, then mix everything together well.
Pour into the greased pan and press down evenly..
Bake in a preheated 350F oven for about 25 minutes or until golden.Remove from the oven and allow to cool down for 15 minutes or so, then score into squares or rectangles. Cool fully before removing from pan.
Otherwise, you have crumbs. Can you tell I was hungry?
I scooped up what was left of mine in crumb-form, mixed in a little honey and pressed them back into the pan. I baked them for about another 15 minutes, let them cool fully and then attempted cutting again. This time I got neater little squares. These are delicious any way you eat them. And I bet they would make a nice homemade gift for someone, if wrapped up nice :)
